Cilantro Lime Shrimp

It has been a while since I’ve posted a guest post! What I am sharing today is a favorite between Paulina and I that we can eat day or night, hot or cold. It is more of a “sunny day” dish, but definitely still enjoyable in times when the sun is in dire need of showing itself.

I absolutely love this dish and am happy to say that I eat it all the time. It’s easy to make, doesn’t require a lot of ingredients and tasty!

Cilantro Lime Shrimp

Recipe Type: Entree

Ingredients
  • 1/2 lime
  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 cup picked cilantro
  • 3 T minced garlic
  • 1 pound Shrimp, peeled and uncooked
  • Salt
  • Pepper
Instructions
  1. Heat wok on high heat. Add half of the Olive Oil and Garlic.
  2. Add shrimp and cook on medium heat. Season with salt and pepper.
  3. Chop up cilantro until desired size, mix with shrimp.
  4. Once shrimp is opaque in color, squeeze in the juice of the lime. Turn heat off and add the rest of the olive oil for an even coat. Finish and serve.

I have just flipped to a new chapter in life by moving to San Francisco this past week. I’ll be working in a kitchen here and will be playing with local ingredients and playing with new recipes. February Random Loves

Whew, I barely was able to fit this post in this month! It’s amazing how packed my blog calendar can fill up these days. It’s  a guarantee that I’ll have some sort of lip product in my purse at any given time. If I’m being honest, it’s not uncommon for there to be 4-7 different products that can be used on my lips shuffling around in my purse. With the cold weather, my current favorite are the eos lip balms. They are so cute and they smell divine, too!

It’s no secret that my love of mugs is continuing to grow, thanks to my friend Victoria at Re.Served. She just listed this new design {as of yesterday} and I am in mug love! How pretty is this color, the adorable trees and those birds? This design is definitely one of my favorites of hers and I can’t wait to get one for myself soon!

Back in November, I was so blessed to have the amazing Jenny Simmons as my Featured Blogger. You all got a peek at her heart, her passions and some of you were able to even win her single! Her very first solo cd released at the beginning of the month and I am loving it to pieces. {I’ll do a post on a particular song that stuck out to me soon} If you’re looking for a powerful Christian cd, this one is a great one.

Lucky Charm paper pack found here

I’ve always enjoyed stamping my own patterned papers, but recently, I have been obsessed with paper packs. Specifically 6 x 6 paper packs. There are so many new ones coming out- I just ordered three more {this being one of them}. The colors, patterns and unique style on these papers grabbed me instantly and I can’t wait to receive it!

I’ve been a MAC girl for as long as I can remember. Recently, I decided to try a drug store foundation, since my make-up costs weren’t something I was proud of. After contemplating all of the different brands {goodness, there are so many}, I decided to go with the Revlon Photoready foundation. I must say, the color, look and feel is amazing. In fact, I think I like the coverage even more than my old MAC one! On top of that, it’s only 1/3 the cost!

You Color My World

I hope that you all had a wonderful weekend. I kept quite busy with a lot of design team cards, behind-the-scenes blog work and also got carried away with lots of cleaning on Saturday night. Yes, it’s true, this single gal doesn’t do the partying scene but rather keeps herself busy with domestic duties. Don’t I lead a glamorous life? *wink*

Each time I get an email saying there is a new 10 Minute Craft Dash #12 entry, I get giddy. The amount of entries already have been more than usual and the talent packed into those entries is phenomenal. There are still five days left to submit your creations and the DT and I look forward to looking at what you make!

Here is my second take on our current color palette- one of the most favorited color palettes to date. We have had a large amount of Paper Smooches fans join for the first time and I couldn’t be more thrilled. Welcome to all the first-time participants!

I received the Word Salad as my very first Paper Smooches set and have enjoyed playing with it. So many fun sentiments in this one! One really can’t go wrong with lots of polka dots in this color palette and a versatile sentiment.

Friendly Robots Galore

While I am definitely a girly girl, I must admit that I enjoy playing with “boy” stamps occasionally. Putting aside the pinks and purples in lieu of browns and blues was just what I needed to kick-start my creativity again. Sometimes doing a 180* is the ticket to getting everything geared up again. Has anyone else noticed this helps sometimes?

I recently was going through my stamp stash and stumbled across the Friendly Robot, a stamp I haven’t used in quite a while. I forgot how adorable {and fun} this stamp is! How can one resist smiling when stamping with this cutie?

I have been doing a lot of masking in cards recently and couldn’t resist using this technique on this card. How fun are these robots peeking out from all directions? You can use all sorts of stamp designs in the Scallop Circle, the most recent Product Spotlight on the DeNami blog.

Thankful For You

If it were possible, I would give each and every person who visited my blog yesterday a hug. You all have BLOWN ME AWAY with how you have spread the word about my blog, your heartfelt emails and sweet comments. Yesterday was officially the highest amount of visits in the five years I’ve been blogging to date. Here’s to another big milestone….Thank you from the very bottom of my heart. I have to admit, I am so happy with how this card turned out. The bright and happy colors are really making me look forward to Spring and all of the glittery flowers just make me swoon. Does anyone else wish that glittery flowers were real? If anyone sees some, let me know. *wink*

My Favorite Crafting Tool….

Today’s a fun day for me- I’m doing a special feature over on the DeNami Addict blog! Basically, this feature showcases some must-have  crafting tools and reasons on why the blogger loves it. Easy enough, right? Wrong. I had the hardest time choosing what I wanted to feature!

After pondering for a few weeks, I finally decided I wanted to share my love of my Big Shot machine with all of you. I hope I didn’t scare you away…..I know it’s a pricey item. I want to share all of the reasons I LOVE my machine and how it’s been an investment I wish I made sooner.

Below is a card that uses a decorative shape I die cut, and dry embossed with a folder. These simple little additions change up the card and add texture and elegance in just a few easy steps.

Happy Valentine’s Day + Video

Happy Valentine’s Day, sweet blog friends!

Each of you mean so very much to me- I’m grateful for those who have followed me since the beginning, and those who just found my blog recently. Your words of encouragement, blog comments and viewership mean a lot to me.

As promised, I have a more light-hearted post to share today. There are less than three days left to join in the 10 Minute Craft Dash #11 and I wanted to bring you a little more inspiration using this theme. Since today is THE day of love, I wanted to load it up with all sorts of hearts and tons of girlie elements.

If you watched my haul video, you saw that I just got the Shadow Ink Cup O’ Joe pad. I must say, I really do like it. I still haven’t played much with the pink colors- I’ll keep you posted on my thoughts of those soon.

I was so inspired by Jess’ video that I wanted to create one for you today. Two videos in a week? Wow! Sadly, I got this idea after work and well, the lighting is not that great. Hopefully you can still enjoy it though!

Worrying Will Never Change the Outcome

From the outside looking in, I may seem put together and have what seems to be a perfect life. I run a successful blog, have a “dream job”, get to travel to different locations and attend shows and meet various people, have a perfect family, a supportive church…. on the outside, yes, this may seem perfect to those who don’t know me. I don’t try to put on a show, by any means, but I suppose to the outsider it looks like things are going well in my life.

Dig a little deeper and there is a whole slew of pains, issues and challenges that I go through regularly. Back in August, I have a pretty major car accident {post here} that changed my life. One would think that life would be back-to-normal now, but it isn’t. I still deal with reoccurring physical pains and complications, health conditions that have changed since the accident, and I haven’t been behind the wheel successfully in a long, long time. I haven’t ever had a panic attack until recently and boy, they are not fun.

In the next few weeks, there will be a lot of changes in my life and if I’m being honest, I’m worried. The people who regularly give me rides will be gone and I’m needing to figure out transportation for the next month. How will I get to the various places I need to go? {I live in a rural area and buses don’t come out this far}

It’s actually more than even this…. will I ever be able to drive by myself again? Will I be able to go through the rest of my life without pain? Will I get back to “normal” again? Will even the mere thought of driving alone not terrify me? Will I find someone who accepts my physical issues and love me despite them? Granted, the last one is not something I should even think about right now, but I’d be lying if I said it hasn’t crossed my mind.

I KNOW that I serve a God who is faithful and can allow good things to come from horrible tragedies and circumstances. I KNOW that God has a plan in all of this. I KNOW that I have people around me that love and support me. I KNOW that my God loves me and isn’t purposely allowing this to make my life horrible.

Am I still worried out of my mind at how everything will work out these next few weeks, months and years? Absolutely. I can’t and won’t deny that. Do I believe that God will work it all out in His perfect plan? Yes.

I have and always will try to be transparent with you all. On the other side of this blog, there’s a girl who is ordinary, has been going through struggles and is still trying to figure out her place in this great big world we live in.

Even though I haven’t fully conquered my worrying state of being, I’m trying. I do know that it doesn’t change anything if I worry or not- how is it that I still let it take control? It’s horrible for my health, doesn’t help my mental state and it really is just a roller coaster for my emotions. Blog friends, let’s try to tackle this nuisance called worry together.
